Not quite what I expected
I was looking for a more balanced tandoori flavor. This blend leans heavily into the smoky and spicy notes, making the sweetness and sourness less prominent. It wasn't quite the traditional profile I was hoping for.
Sourced from 40 small regenerative family farms across India and Sri Lanka, our Tandoori Masala includes 16 single-origin, freshly-harvested spices for a perfect balance of spicy, sour, sweet, earthy, and umami flavors. Featuring turmeric, cumin, and coriander for earthiness; salt, garlic, and ginger for a wide, flavorful base; Byadgi Chillies for a dynamic kick and added aroma and brightness; amchur for tartness; black cardamom and Sirārakhong Hāthei Chillies for smokiness; jaggery for sweetness; and cinnamon, green cardamom, fenugreek leaves, and saffron for richness. The spices are blended, and any added heat or fire will wake up those flavors and let them fully absorb into your dish. Whether you use yours in a dry rub or a yogurt-based marinade; chicken, beef, shrimp, paneer, or veggies; with a grill, oven, or stove — our Tandoori Masala plays well with a range of flavors, fats, and forms of heat. I've put this on chicken, lamb, and even roasted potatoes, and it's fantastic every time.
This Tandoori Masala offers an incredibly rich and complex flavor. The mix of spicy chillies, earthy cumin, and bright coriander is very well done. My only minor complaint is the tin size; it runs out faster than I'd like given how much I enjoy using it.
This masala brings a robust and very flavorful punch to my cooking, especially for grilling. The smoky cardamom is strong, which is a good thing if you like that profile. It's a fantastic blend, though I'd prefer a touch less heat sometimes.
You can genuinely taste the freshness of each spice in this blend. It's bright, aromatic, and provides an authentic tandoori flavor that's hard to replicate with other masalas. I've used it on lamb and chicken, and it's always a hit.
